Sautéed Spanish Mushrooms with Saffron & White Wine

What is the best way to stimulate one's appetite? Having a tantalizing starter can prepare people for the main course. However, fresh salads and vegetables such as mushroom, soup and seafood are popular appetizers.

Mushroom contains protein, fibre, and B vitamins. It has a variety of benefits for our health, especially it’s very useful for the immune system. In addition, it has essential positive effects on several diseases like cancers, diabetes, and heart diseases, as the mushroom is full of antioxidants and fibre.

The facts mentioned above lead to prepare a healthy and delicious starter. The thing that makes this recipe more particular is using a unique spice, high-quality saffron, which takes the food to another level.

Sautéed Spanish Mushrooms with Saffron

Instruction

  1. Pour ¼ a cup of white wine, which was slightly warmed up, into a bowl, and pinch in ½ teaspoon of high quality saffron threads. Set it aside.
  2. Pour 2 tablespoons of extra virgin olive oil into a frying pan which is over a medium-high heat.
  3. Add in 4cloves of garlic which have been thinly sliced, and 12 button mushrooms that have been cut into a half. Mix them with the oil continuously for 2minutes.
  4. Now pour in saffron-infused white wine to the pan, add in ½ teaspoon of freshly lemon juice, season everything with sea salt and freshly cracked black pepper. Combine them contiguously.
  5. After 2minutes, lower the fire to a low heat, and let the mushrooms cook for 4-5 minutes.
  6. Remove the pan from the heat. Transfer mushrooms to a serving dish, and sprinkle some freshly chopped chives on top.

  • 12 button mushrooms
  • 4 cloves of garlic
  • ¼ cup white wine
  • 1 teaspoon lemon juice
  • handful fresh chives
  • sea salt
  • black pepper
